I am going to make this short and to the point: YOU need to eat more vegetables. Before you say ‘No way’, here are easy, healthy vegetables ideas that I hope inspire you to give vegetables another chance – they deserve it.
Try different colored vegetables: You can find get carrots, potatoes and cauliflower in a variety of colors including purple. The varying color often relate to a slightly different flavor and nutrient value.
Buy them prepared: Yes, it costs more to buy pre-chopped butternut squash or shredded brussels sprouts but if you are short on time or spending extra money on something motivates you, here is your encouragement. Once you have more time or get into the habit of prepping your vegetables, you have this handy shortcut.
A variety of salts: I am sure you have the standard table salt that you use for seasoning your vegetables, but try some other salts.
