How do you make banana cream pie?
Ever since I was young, I have loved banana cream pie. In fact, I would choose banana cream pie over chocolate cake any day. The biggest issue I had with the banana cream pies people made when I was a child is that they put nuts in the crust or coconut flakes on the pie.
Although I can appreciate those additions now, as a child, I just wanted the graham cracker crust, bananas and cream. Since we probably shouldn’t eat straight up banana cream pie every day, I made a healthier recipe for you titled banana cream pie mason jar overnight oats.
How do you make banana cream pie overnight oats?
For this banana cream pie mason jar overnight oats recipe, I swapped out the graham cracker crust with delicious Purely Elizabeth original granola. The crunchy granola provides a nice texture while the use of coconut sugar and coconut oil enhance the flavor. I have not made these banana cream pie mason jar overnight oats with granola mixed in overnight, but it may enhance the vanilla flavor even more.
Ingredients:
1 medium fresh banana (70g), divided
1-2 scoops of protein powder of choice (aim for 20-25g of protein; I used John’s Killer Protein)
½ cup old fashioned oats
1 small container (4-5 oz.) of plain or vanilla yogurt (I prefer Skyr)
¼ teaspoon vanilla
2 teaspoon chia seeds
A dash of cinnamon
4-6 oz. unsweetened almond milk (enough to top off ingredients)
¼ cup (20g) granola (Purely Elizabeth original)
Fresh fruit, optional
Direction:
1. Mash ½ the banana (50g or so). If the banana is not ripe, heat for a few minutes in the microwave so it will be easier to mash, and a bit sweeter.
2. Place protein through almond milk into an 8-12 ounce mason jar, mix well, cover and refrigerate overnight.
3. Top with remaining banana, sprinkle on some more granola, graham cracker crumbs or melted peanut butter.
