Two and a half years ago, I received an Instant Pot for Christmas. For two and a half years, it had collected dust. When I first opened my gift, I dutifully washed it, read about performing the initial steam test, and then the flashbacks began.
I thought about my Grandma’s pressure cooker: it would bounce around, spit, screech some metal-ly sounds once in a while, and overall, scared me. I knew the pressure cooker has come a long way since then, but the intimidation set in, and the Instant Pot collected dust.
Shortly before my diagnosis, I saw a friend post about using her Instant Pot, and so I asked her to come teach me. From there, we started talking to more friends who hadn’t used their pots yet either, so we knew we need to tackle this project together.
Everyone waited for me to get through my treatment, and we finally got everyone schedules aligned enough to set aside a Sunday to have an Instant Pot dinner party. We each pick one or more recipes to try, brought all the ingredients to the hosts’ house, and set about making our feast.
I went simple with whole chicken. Also created by friends included: meatballs, inside-out egg rolls, and Easy Ramen Soup.
We also made beef stew, spaghetti squash, risotto, and buffalo dip (which I consumed a fair amount of)…..
While the ladies were indoors whipping up the meals, the men and kids were mostly playing outside, with some occasional visits to keep us company, and witness the spectacle. By the way, there was dessert! Our most Instant pot experienced friend made chocolate lava cake.
Finally, this is the first time I am sharing my pixie-do with you all. I will soon share my story of my hair unveiling with my children, and eventually, the public.
