What can you mix with Quinoa?
One of my son’s favorite products at our local Aldi, is a quinoa brown rice mixture. Most of the time, we enjoy it as a simple side dish however, I have been using it in this breakfast bowl that I have been enjoying.
You could create this breakfast bowl for lunch or dinner really, but since most of us make eggs in the morning, I mostly think of it as a breakfast bowl. You can also feel free to use plain quinoa, swap out the black beans for the bean of your choice, and even toss scrambled eggs on this baby if you prefer over a fried egg.
What can I add to quinoa when cooking?
Personally, when I cook my quinoa, I prefer to cook it in vegetable broth and maybe some seasoning. Why? Well, the package directions will often indicate water, maybe some salt, but that makes for a bland quinoa. While there is nothing wrong with simply cooking it with water, especially if you are going to add it to a sauce of some sort, I like it to have some extra flavor in case I simply am tossing it on a salad or serving in a recipe like this breakfast bowl. So, if you want to get creative, add in some garlic, onion, or your favorite herbs and spices.
Ingredients:
1 cup cooked quinoa or quinoa brown rice mixture (I used earthly grains quinoa blend)
1 fried egg
1 tbsp olive or avocado oil
1/3 cup black beans, or bean of choice, rinsed
½ avocado, sliced
Instructions:
- Cook quinoa or quinoa brown rice mixture, and set aside.
- Meanwhile, rinse the beans and set aside.
- Heat the olive oil and fry the egg.
- Place 2 cups quinoa or quinoa brown rice mixture into a bowl, mix in black beans, and top with avocado and egg.
