Hello friends! Last week the kids had spring vacation, and we were blessed by a visit from my aunt.
We spent as much time outside as we could but naturally, one day was 70 degrees and the next was 35 with sleet. During the week, we experimented with recipes, celebrated my Aunt’s 80th birthday, and binge watched The Crown on Netflix (have you watched?)
Two recipes we experimented with were a chicken and mushroom alfredo, and an enchilada casserole. Therefore, I decided I will work on re-creating those recipes and then sharing them with you soon.
While I was planning on making those this week, I also wanted to share some recipes I have been inspired by, and publish those soon as well: Bacon, Egg & Beef Hand Pies although I am going to try a twist with ground chorizo and a different base rather than puff pastry.
I will also play with creating my own version of this Kale & Brie Frittata. To change it up for my family, we will use a different cheese, and toss in some other ingredients to really make it our own.
I also have recipes plans in the works involving a hearty salad, a breakfast bowl, a BLT, and a pizza so come back frequently so you do not miss out!
