Ingredients:
2/3 cup cooked quinoa
2/3 cup corn
2/3 Tablespoon minced scallions
2/3 cup canned black beans, rinsed and drained
2/3 cup salsa or pico de gallo
2 or 3 teaspoons fresh herbs
2/3 cup chopped avocado
2 or 3 Tablespoon favorite zesty dressing or vinaigrette
2 0r 3 dashes of pepper, and salt, if necessary
2/3 cup cooked quinoa

2 0r 3 dashes of pepper, and salt, if necessary
Directions:
1. Cook the quinoa and set aside.
2. While the quinoa is cooking, prepare the other items and mix in a bowl.
3. Once the quinoa has cooled, add it, and the dressing into the bowl, mix gently, and enjoy. I suggest allow time to refrigerate so the flavors can combine. Season with salt and pepper if you need.
