Happy New Year!
I bet you have set all kinds of goals or aspirations or have even chosen a ‘Word’ for 2015. In fact, many of you have health, food, or even weight loss goals but one thing that we all need no matter the goal: fast, healthy and easy recipes, especially chicken recipes.
Well, I have a yummy dish to help -> Last night we hosted some friends for a potluck New Year’s Eve party and our favorite Italian family brought a fantastic chicken recipe. In fact, we love the dish so much, that my daughter and I were having a tug of war with the last serving this morning.
You can make this dish as light as you wish because you can make your own pesto and use a light olive oil and load up with as many veggies as you can stuff in the skillet.
Ingredients:
1 Tablespoon olive oil
1 pound skinless chicken breasts, ‘butterflied’
1/3 cup pesto
1 cup baby carrots, halved
1 cup whole pitted olives
Directions:
1. Heat the olive oil in a large skillet over medium heat. Saute the chicken until cooked through and set aside to cool slightly.
2. In a large bowl toss the pesto, carrots and olives together and set aside.
3. Once the chicken cool enough to handle, chop the chicken into bite-sized pieces, toss with pesto mixture and enjoy. You can eat the dish warm or place in the fridge and then consume cooled.
