I have something I find amusing to share: ever since I began working full-time at home as a clinical data manager, my husband has been doing more of the cooking. Since he has been in the cooking mind-set, we both planned the Thanksgiving Day menu last night.
We decided to look for some fun twists on Thanksgiving classics and came across two we wanted to try: Twice Baked Sweet Potatoes with Crunchy Topping and Crunchy Apple Pie Parfaits that also incorporate a favorite of the family, pumpkin flax granola by Nature’s Path (seriously good. Have you tried it?)
Luckily, they said I could share a recipe of theirs using the luscious granola. Give this delicious parfait a try, that is, unless you eat all the granola before it makes it into the parfait glasses.
Wouldn’t this make a fun breakfast or dessert for the non-pie eaters on Thanksgiving?
Prep Time: 5 minutes
Cook Time: 5 minutes
Ingredients:
1 1/2 cups plain fat free Greek yogurt
2 tbsp honey
1 tsp vanilla
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp butter
3 apples, peeled and chopped
2 tbsp brown sugar
1 cup Nature’s Path Pumpkin Flax Plus® Granola
Directions:
1. Stir yogurt with honey, vanilla, cinnamon and nutmeg; set aside.
2. Melt butter in a small heavy-bottomed saucepan set over medium heat. Add apples and brown sugar. Cook, stirring often, for 5 to 7 minutes or tender and golden.
3. Layer evenly in 4 parfait glasses: apple, yogurt mixture, granola, repeating layers twice.
