Today, I present you with a recipe that should fit just about every diet you can think of, unless you are on a purple potato restricted diet.
What, you haven’t heard of or tried purple potatoes? You are missing out on fun and nutrients. This is what happened when we introduced them to the kids.
Ingredients:
4-5 medium purple potatoes, cut into chunks
Italian dressing or your favorite vinaigrette
Directions:
1. Preheat the oven to 350 degrees Fahrenheit
2. Mix the potatoes with the Italian dressing and bake for 30-45 minutes depending on the size of the potato pieces. I suggest you begin with 30 minutes and then see if they are fork tender and if necessary, bake a few more minutes.
By the way, I ended up making a salad using the potatoes and the lettuce from our garden!
