Leftovers and scraps in the fridge can make a fast, healthy and yummy meal. For example;
*Carrot
*A third sweet onion
*Two cloves of garlic
*Half roasted chicken
*Cooked lentils
*Low-sodium chicken broth
I grabbed all of the above items from the fridge, did a quick saute, tossed remaining items in the pot, simmered for 15 minutes and then announced to my husband, at 11:45 in the morning, that dinner was ready.
I felt like Wonder Woman.
Ingredients:
2 Tablespoons olive oil
1 carrot minced
1/3 sweet onion, chopped
2 cloves of garlic, finely chopped
4 cups low-sodium chicken broth
2 cups chopped cooked chicken
1 1/2 cups cooked lentils
salt and pepper to taste
Directions:
1. Add olive oil to a large pot and heat over medium heat. Saute the carrots for 3-4 minutes, stirring frequently. Toss in the onion and garlic, saute 1 minute.
2. Increase heat to high and pour in the chicken broth. Add the chicken and lentils and stir. Once it comes to a boil, cover and lower heat to a simmer. Simmer for 15 minutes or longer if you wish. Taste and season if necessary.
