Whether you work at home or need an idea for dinner, a quesadilla is a quick way to go. An added bonus is this is a great way to use up leftovers without anyone noticing.
This was also a fun way to introduce our son to different foods. The first time I made an quesadilla for him, I simply called it a Mexican pizza. He was intrigued and after he ate it, I told him the real name for it is a quesadilla.
On Valentines Day, we went to a Mexican restaurant where they have only one quesadilla option per day. I have made my version of the one my son ate, but with salsa and baby spinach too.
Ingredients:
olive oil spray
1 whole wheat 8 inch tortilla
1/2 cup shredded cheddar cheese
1/2 cooked chicken breast, sliced
2 Tablespoons cooked brown rice
2 Tablespoons salsa
A few baby spinach leaves, chopped or torn
Directions:
1. Lightly spray a non-stick pan with olive oil spray and heat over medium heat.
2. Place the tortilla in the pan and sprinkle with cheese. Layer the remaining ingredients and then fold over one side of the tortilla to form a half-circle.
3. Flip the quesadilla after a minute and heat an additional minute. Cut and serve.
