Yesterday my son was home from school thanks to a bout of pink-eye, and he was asking for his same old, same old favorite snacks. I told him, we are going to eat some avocado.
Naturally, his response was ‘I hate avocado!’.
I told him that can’t possibly be true because he just ate a bunch of it the other day. ‘I did not!’ he stated. I reminded him that ‘the best dip ever’ recipe is full of avocado and he ate tons of it. I said ‘Why don’t we make some guacamole, which is full of avocado?’.
He said he would not like it. We made this recipe and even made sure it was spicy since he and my husband enjoy spicy food.
They ate the entire batch for lunch.
Serve with gluten-free chips (In the photo, I used pretzels but cant wait to try Udi’s new chips!).

Ingredients:
1 and 1/2 ripe avocados, mashed
1 teaspoon fresh lime juice
1 teaspoon sriracha
2 cloves of garlic, finely chopped
1/4 red or sweet onion, diced
1 organic tomato, diced
1/2 cubanelle pepper, chopped
a large handful of fresh cilantro, chopped
Directions:
1. Scoop the avocado into a large bowl and mash with the lime juice and sriracha.
2. Prepare the remaining ingredients and mix well.
