I know what you are thinking: “My kids won’t ever eat this.” “This must be a recipe that only you and your hubby eat.”
Well guess what? This is a dish that my daughter eats as a snack. She had eaten some of a big Thanksgiving Day salad that was loaded with chickpeas, so when she saw me making a salad a few weeks ago, she asked me if I was adding chickpeas.
I told her that I could add them if she would like to which she replied “Can I just have some with feta, tomatoes and olive oil?” Naturally, I obliged.
Chickpea, Feta & Tomato Recipe (Serves 1; easily multiplied)
Ingredients:
1/3 cup rinsed canned chickpeas
1/3 cup crumbled feta
1/3 cup chopped tomato
olive oil and vinegar to taste

Directions:
Place all in a bowl and drizzle with olive oil and/or vinegar.
