Sometimes you have to mix things up.
Literally.
I know that can freak out your kids but sometimes you just have to get yo’ freak on.
Honestly, my daughter can’t stand eating straight up broccoli but doesn’t mind if it is mixed into pasta or rice. Plus, toss some bacon in and I don’t hear a single complaint.
Ingredients:
1 cup of cooked brown rice
1 cup of broccoli crowns or pieces
2 strips of cooked bacon
Directions:
1. Cook the brown rice per package instructions. When the rice is resting, bring a pot of water to boil with a steamer inserted.
2. Place the broccoli on the steamer insert, cover, reduce heat to simmer and cook for just a few minutes until you can just get a fork into it. Remove from heat.
3. Meanwhile, cook a few pieces of bacon in the microwave.
4. In a large bowl, combine the rice, broccoli and bacon. You can mix with a touch of olive oil, grapeseed oil or touch of butter.
If you think this through ahead of time, you can have it all working at the same time or use with leftover rice and have a side dish in minutes.
