It has been a week since I posted because we have been busy bees. We have had lots of visitors and have our Godsons coming to visit tomorrow, so there is little time for food blogging until school starts.
However, there has been plenty of cooking and leftovers so while I was running the kids to activities yesterday, my fabulous hubby put his creativity to work and made dinner.
When we walked in the door he said, ‘I have dinner going. It is similar to a dish my Mom (Portuguese) made us as kids.’
All he needed from the dry pantry was some canned beans, and then tossed in a partial jar of salsa, some cooked chicken, cooked shrimp, a tomato from the garden and then served it over leftover rice. It was ready in 10 minutes and we all loved it.
Ingredients:
1 teaspoon olive oil
1/2 cup sweet onion, chopped
2 cups chicken, cooked and cut into bite-sized pieces
1 cup cooked shrimp
1 15.5 oz. can cannellini beans, partially drained
1 15.5 oz. can kidney beans, partially drained
1/2-3/4 cup salsa
1 tomato, diced
Directions:
1. Heat the oil over medium heat and saute the onions until translucent.
2. Toss in the chicken, shrimp, salsa, tomato, beans (with remaining juice) and simmer for 5 minutes. Serve over brown rice if you wish.
