There is a never ending need for fun breakfast recipes and this one fits the bill.
Tell everyone it is a muffin with bacon and they will be sure to grab two.
Bacon, Leafy Basil and Tomato Breakfast Corn Muffin Recipe (Yield = 12 muffins)
Ingredients:
1 cup Corn Meal, white or yellow
1¼ cups sifted flour
1/2 cup packed brown sugar
3 teaspoons baking powder
½ teaspoon salt
1 egg
1¼ cup milk
¼ cup oil
5-6 slices of cooked bacon, crumbled
5 fresh basil leaves, chopped
1 cup chopped tomato
baking spray
Ingredients:
1 cup Corn Meal, white or yellow

3 teaspoons baking powder
½ teaspoon salt
1 egg
1¼ cup milk
¼ cup oil

Directions:
1. Preheat the oven to 425 degrees Fahrenheit.
2. Blend all dry ingredients.
3. In a small bowl, whisk the egg and add to the dry ingredients. Fold in the milk, oil, bacon, basil and tomato. Do not over mix.
4. Pour into muffin tins coated with baking spray. Fill each tin 3/4 full and bake at 425°for 20-25 minutes.
