Come back, this is a not fancy or complicated recipe at all.
Now then, on with my story. My daughter, husband and I are overjoyed that we can now get peaches here in Rhode Island.
During the winter, you do not even see them at all around here so we are going to be over-indulging in them for the Summer.
Since we also have fresh basil from the garden as well as some strawberries on hand, I decided to play around to create a fun dessert.
Yes, you are allowed to put some frozen yogurt on top if you wish.
Ingredients:
3 peaches, sliced into two halves
2 handfuls of whole strawberries
1 large fresh basil leaf or a few small ones
Directions:
1. Preheat an indoor or outdoor grill on a medium setting.
2. Chop the strawberries and place in a small saucepan. Heat to a boil then turn down to simmer. Mash the berries with a fork or potato masher for a minute or so. Remove from the heat and toss in the basil.
3. Grill the peaches just until grill marks appear. Plate and top with sauce.
