The kids are both getting tired of broccoli, even when I top it cheese (that would not happen to me!) so I decided to get a bit more creative. I grabbed a broccoli slaw mix at Trader Joe’s and tossed it with an Asian inspired peanut vinaigrette and told everyone to try a bite. The kids thought it was ‘fine – not their favorite but good’ but my husband and I say ‘Day-um good!’.
I told the kids we can toss it on burgers or with potato salad sometime or find other fun ways to eat our broccoli without just crunching ‘trees’.
Feel free to toss a bag of slaw with your favorite dressing and accoutrements.
Asian Peanut Vinaigrette Broccoli Slaw Recipe with Cranberries & Sunflower Seeds (Yield = 4 sides)
Ingredients:
1 1/2 cups packaged broccoli slaw mixture
1 cup dried cranberries
1/4 cup sunflower seeds (or any seed or nut you have)
A handful of minced fresh parsley
4 tablespoons of Asian style dressing or any your prefer

Toss all ingredients well and serve.
