Easy Ham & Cheese Mini Frittata Breakfast Bite Muffins (Yield 16)
Ingredients:
6 eggs
1/3 cup 1% reduced-fat milk
A handful of baby spinach, minced (use a favorite herb if you wish)
1-2 slices of ham, chopped
A handful of shredded cheese (I used cheddar)
1/8 teaspoon fine salt
1/8 teaspoon black pepper
1/8 teaspoon garlic powder, optional
cooking spray
Ingredients:
6 eggs
1/3 cup 1% reduced-fat milk

1-2 slices of ham, chopped
A handful of shredded cheese (I used cheddar)
1/8 teaspoon fine salt
1/8 teaspoon black pepper
1/8 teaspoon garlic powder, optional
cooking spray
Directions:
1. Preheat the oven to 350 degrees.
2. Whisk the eggs and then toss in remaining ingredients and mix well.
3. Spray a mini muffin pan with cooking spray and fill each well 3/4 full with egg mixture.
4. Bake for 20 minutes.
