I know what you are thinking: ‘Is this grilled sandwich week?’. Nope, it is not, although there is such a thing, but while I was making the ‘super grilled cheese sandwich‘ the other day, I decided to see what else I could make out of some leftovers.
I grabbed the barely any left roasted chicken, one lonely pickle from the jar my daughter and I had made weeks before and a slice of ham and cheese.
While this tasty dish was grilling, I realized that I had made a modified cuban sandwich. Oh, don’t tell me I can’t call this a cuban because there is no pork, just be creative and roll with it. Ok? please?
Ingredients:
2 slices of whole grain bread
1 slices of no nitrite/nitrate added ham
1 slice of Swiss cheese
A few pieces of cooked chicken, sliced thin
1 pickle, cut into thin slices
1/2 teaspoon Bolthouse Farm Yogurt Thousand Island dressing
Directions:
1. Heat up your indoor, outdoor grill or panini press.
2. Prepare all ingredients and stack onto one slice of bread. Top with remaining slice of bread.
3. Grill until the cheese is all melted and the bread is toasty.
4. Allow to cool slightly and enjoy!

I’m so glad it’s National Grilled Cheese month, I love all these sandwiches I’m seeing. Yours look so darn good!! I’m thinking sandwiches for dinner tonight!
