Today we are ‘celebrating’ the school closings by baking and soup making however yesterday was all about savory recipes. We madesauteed brussel sprouts, made Salmon, roasted a whole chicken and made these Mini Greek Pizza Muffins by Eatingwell.
I am sharing the exact ingredients I used but most of them remained the same as the original recipe. Please go to the link above for directions. There are so many great variations you can do so tell me: What are your favorite pizza toppings?
Ingredients
2 tablespoons extra-virgin olive oil
2/3 cup finely chopped onion
2/3 cup finely chopped red bell pepper
1/3 cup whole-wheat pastry flour
1/3 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon dried oregano
1 teaspoon sugar
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/3 cup low-fat milk
1/3 cup crumbled reduced-fat feta cheese
1 large egg, well beaten
2 tablespoons marinara sauce
2 tablespoons chopped black olives
My verdict: we loved these however, they dry out quickly when reheating so gobble them up in one fail swoop.

Great post Jenn! What a healthy looking savory muffin! Just wondering if the olives add all that much, or if I could sub in something else? We don’t eat olives here – so any suggestions you have would be great…they look too good not to try!

Jennifer, I could stand to get snowed in with a dozen of these! (I always get carried away with mini muffins–as if the calories don’t add up!) They would not have a chance to sit around and dry out.

Hi Maryea! Yes, I did note at the end of the post that they do dry out so you need to eat them right away (not usually a problem right?)

I made pizza muffins a while back and mine dried out quickly, too. I do love a savory muffin, though!
