There is a wonderful article in this month’s Eatingwell.com about saving money on food and one key point is using leftovers. In one recipe, they use leftover spaghetti and right away I knew Spaghetti Frittata would be a good one to try.
I pretty much followed the recipe however, three medium onions sounded like way too much and I only had one large sweet onion so that is what I used. I will say that the onion tastes great but you may wish to chop the onion rather small so that it is not as overwhelming.
Seeing that the kids may be a bit standoffish upon looking at a slice of piece, I showed it to them fresh out of the pan and called it Noodle Pie. They seemed excited to try it. It was a huge hit with my son but my daughter did not enjoy it until I topped it with lots of chopped tomato fresh from the garden.
