This is often the time of year where the tomatoes are aplenty in gardens and that holds true for us. Luckily, my daughter and I were watching a cooking show the other day and they were making tomato soup. She begged me to make some so I headed over to Eating Well and decided upon the Roasted Tomato Soup.
I followed the recipe and must say, it does take a bit of time to remove the skin after roasting the tomatoes but it was well worth it.
